ANTI-INFLAMMATORY SALAD WITH JUST THE RIGHT KICK

BASE INGREDIENTS
- ½ red cabbage, shredded
- 2 organic bell peppers (choose 2 different colours), sliced
- 350g of mung bean sprouts, blanched
- 14g of fresh mint leaves, finely chopped
- Sprinkle of black sesame seeds
DRESSING INGREDIENTS
- 1 organic lemon, juiced
- 1 organic lemon, zested
- 3 inches of organic ginger, minced
- Seeds from 1 pomegranate
- 1 cup of avocado oil
INSTRUCTIONS
- Layer shredded red cabbage, sliced bell peppers and blanched bean sprouts in a salad bowl.
- Mix salad ingredients in a bowl and pour on top of salad.
- Top with mint and sesame seeds.
- Mix well, serve and enjoy!
