GINGER SPICE SPROUT SALAD

ANTI-INFLAMMATORY SALAD WITH JUST THE RIGHT KICK

BASE INGREDIENTS

  • ½ red cabbage, shredded
  • 2 organic bell peppers (choose 2 different colours), sliced
  • 350g of mung bean sprouts, blanched
  • 14g of fresh mint leaves, finely chopped
  • Sprinkle of black sesame seeds

DRESSING INGREDIENTS

  • 1 organic lemon, juiced
  • 1 organic lemon, zested
  • 3 inches of organic ginger, minced
  • Seeds from 1 pomegranate
  • 1 cup of avocado oil

INSTRUCTIONS

  1. Layer shredded red cabbage, sliced bell peppers and blanched bean sprouts in a salad bowl.
  2. Mix salad ingredients in a bowl and pour on top of salad.
  3. Top with mint and sesame seeds.
  4. Mix well, serve and enjoy!
